The Mustard Seed at Echo Lodge is a sumptuous country house hotel with a highly acclaimed restaurant; a great retreat for lovers of good food and fine wine.

Set amid the rolling countryside of County Limerick , in the rural village of Ballingarry, Echo Lodge is a classic 19th Century parochial house built in 1884. This genteel house, set within seven acres of leafy gardens was home to a community of nuns, "The Mercy Order" for over a hundred years, and it still retains an aura of tranquillity. Relaxed elegance and comfort are key features at Echo Lodge and this charming country house hotel is filled with attractive antique furnishings and intriguing objects d'art tucked away in neat little nooks and crannies.

The famed Mustard Seed restaurant has a highly regarded reputation stretching over a decade and drawing connoisseurs from far and wide. The restaurant itself is set out in a typically homely relaxing country way, for an intimate candlelight and silverware affair. The seasonally changing menu draws from the freshest local produce, with herbs and vegetables from Echo Lodge's own organic garden, for delightfully creative dishes; such as Warm oysters with a red kidney salsa, ginger coriander and sesame oil, venison sausage and spiced puy lentil. To be followed by breast of barbarie duck on a bed of buttered green, lime and vanilla mash and chocolate oil or baked Irish salmon with sun dried tomato tapenade and roast aubergine puree. All of which is complimented by an extensive wine list with bins from around the globe.

And then of course there are the bedrooms; each has been individually decorated affording luxury and taste. You could feel perfectly cosseted in these sumptuous bedrooms, spaciously appointed and set with old world furnishings and modern facilities and fittings. The hotel also has some exquisite two-bedroom suites with separate lounge, ideal for small groups travelling together.

The Mustard Seed at Echo Lodge has won wide acclaim, regarded as one of the best places to stay and dine in Ireland. Close to golf courses at Ballybunion and Adare and an hour's drive from Shannon Airport , the hotel is well placed for exploring the South West and Shannon area of Ireland.

This is a beautiful building but we did not feel totally comfortable; we were glad that we were only staying there for one night. We enjoyed being able to walk around the kitchen garden at the back and seeing all the fresh produce that the hotel uses and the food was extremely good. Our room was reasonably comfortable although rather small and the shower room and toilet was just the size of a closet; as I say it was fine for just one night but that room would have been inadequate for a longer stay. Also, we encountered some problems trying to contact the hotel reception from our room; 2 or 3 phone calls (to request a table for dinner and for someone to find a remote control for the TV) were diverted to an answerphone - something which we've never encountered before in a hotel.

Parts of hotel were a bit on the cold side when we visited. Decor is eclectic but not odd. Dining is a major attraction of the hotel, although I have not dined there.

Excellent in every regard, except it is isolated. Also with onnly a few guests there, we were put below a noisy couple. the perfect way to end our vacation, though.

This Hotel is a treat, with only 16 bedrooms and a very welcoming host you feel like you are staying at a long lost friends house. A long lost friend who happens to have a great chef in the kitchen. The food is amazing, one of the best I have experienced in Ireland. Overall great place!!
